Easy Chicken Nachos Recipe (With Guacamole & Sour Cream)

- 1 avocado
- 2 tablespoons sour cream

- ¼ cup sour cream (extra for serving)
Instructions
- Tear or cut the cooked chicken breasts into pieces and sauté in a pan with the peri-peri sauce.
- Chop the onion and tomato into small cubes and mix with the lemon juice, olive oil, chili, and a pinch of salt and pepper. Set aside (this forms the salsa).
- Mash the avocado in a bowl with a fork. Mix in the sour cream, grated garlic, chopped cilantro, and a pinch of salt and pepper to make the guacamole.
- Spread the tortilla chips on a baking tray.
- Spoon the peri-peri chicken over the chips, then add the salsa, and top with the mozzarella cheese.
- Roast in the oven for 3–4 minutes or until the cheese has melted.
- Spoon the extra salsa and guacamole on top and serve with the additional sour cream.
- Garnish with extra fresh cilantro.
